Note from the Publisher ~ Sort of Obsessed With All Things Pumpkin

By Jamie Clark, MK Roanoke Publisher October 14, 2014
I do love me some pumpkin. Funny that you can buy pumpkin all year long but it's not until October that I actually think about it. And crave it. The scene from Forest Gump comes to mind but instead of shrimp, it's pumpkin. Pumpkin coffee, pumpkin bread, pumpkin cookies, pumpkin soup, pumpkin spaghetti, pumpkin fries {ok, I don't know if those exist but man they'd be good, right?}

To show my love for all things pumpkin I decided to try my hand at making my own pumpkin creamer for my morning coffee. My husband's first reaction was "why? why would you do that?" Ummm...because I can? {He doesn't like when I go all DIY/homemade on stuff. Whatevs. Still doing it.} Curious how it turned out? Well, watch and find out!

Ingredients:
1 cup half & half (I used Almond Milk but the original recipe called for half & half)
1/2 cup pumpkin
1-2 tbsp sugar (I omitted the sugar)
1 tbsp vanilla
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon

My husband and I both very much enjoyed it, though he missed the sugar!

Have a great pumpkin-spiced-everything week. And, please share recipes or links to your favorite pumpkin recipes, too!

Peace, Love, Pumpkin, and Macaroni,
