Pancakes and Sausage Muffins

This year one of my goals was to make more and buy less, at least when it comes to convenience foods.  My kids love Pancakes on a Stick, a pancake wrapped around a breakfast sausage on a stick.  I can't blame them, I love anything on a stick!

Since I couldn't figure out how to make those on a stick I turned them into muffins.  They freeze great, just like the store bought kind, and you can make a ton at one time.  Both bonuses for our busy mornings!  My recipe is super easy because, well, because I am lazy.  You could certainly make your own pancake mix, I never have so I didn't want to start trying tonight!  : )

One container of Bisquick pancake mix (the shake and make kind)

Pre-cooked Jimmy Dean breakfast sausage links

Preheat oven to 375 degrees.

Follow directions to make the pancake batter, decreasing the water by 1/4 of a cup. (If you make your own I would decrease the liquid by 1/4 of a cup of something, whatever you use.)  Cut sausage into small pieces.  I slice them down the center and then cut them up into about ten pieces. 

Spray your muffin tin with nonstick spray.  Pour muffin tin half way full with pancake mix.  Drop several (4-5) pieces of sausage gently into the mix. Top the sausage with just enough batter to cover the sausage.  Repeat.

Bake muffins for ten minutes (give or take depending on how hot your oven bakes).

We pour syrup over ours, and I have also brushed syrup over the top right when they come out of the oven.  I have even added syrup to the pancake mix to make them even maplier (I don't think that is a real word, but it is according to my 5 year old.).  You can also make these in mini muffin tins if you have smaller kids or just like smaller bites.
