With the amount of Easter candy that's probably been eaten recently, I wanted to share a slightly healthier recipe this week!
This is a salad I recently made for a family event, it was such a huge hit that I wanted to share it!
1 Bag frozen green beans
1 Cup sweet grape tomatoes (I cut mine in half)
1/2 Cup diced red onion
3/4 Cup feta cheese
3/4 Cup walnut pieces
1 Cup Lemon Vinaigrette salad dressing (any store bought brand will do)
1 Lemon
Steam the green beans until they are "tender-crispy". Remove from heat and place beans in ice cold water to stop the cooking process. Drain and let cool.
Add tomotes and vinaigrette to the green beans and toss until evenly coated. Place in refrigerator for a few hours or overnight.
Add the walnuts, feta cheese and if you like, more dressing.
Cut lemon in half and squeeze half over the salad then slice the other half of lemon for garnish.
Serve and enjoy !
