Macaroni & Cheese Muffins

with veggies your kids won't even notice!

These are so sneaky and good you're kids will have NO idea they are loaded with veggies!

Step 1:  Prepare the ORANGE Puree (aka, the veggies)
You'll need one medium sweet potato, peeled and cut into chunks, 2-3 carrots peeled and sliced, and just put them in a pot, cover with water, and boil for 20-30 minutes until soft.  

Then puree with a food processor (I used a blender) adding about 2 tbsp water until smooth and no chunks showing.  (Chunks are a dead giveaway to kids!)









Step 2:  Prepare the Macaroni Muffins!
Mix 1 cup orange puree and 4 eggs, then add 2 cups cooked macaroni noodles, and 3/4 cup shredded cheddar cheese (feel free to use low-fat cheese).  

Scoop (I use a 1/4 cup measuring scoop) into lined and lightly sprayed cupcake/muffin pan and then top with about a tbsp of the shredded cheddar cheese.  

Bake at 350 for 20-25 minutes or until lightly browned on top.  




These are great served right away or you can freeze them for lunches or snacks during the week!  I swear my kids never tasted the veggies!
