May 26th is Burger Day!  We have 3 delicious recipes to help you celebrate.

Now that all 3 of my children are older it seems like some nights my husband and I spend hours running them from activity to activity and dinner just seems like a blur of fast food drive through's!  Which I really try to avoid!  So I have had to come up with some fast and easy recipes that I can make and freeze for easy reheating or recipes that can be cooked and kept in a crock pot or oven on warm.  Here are 2 easy and kid friendly recipes that my family loves made out of basically the same ingredients!

Easy Turkey Burgers by Kimberly Vees

Ingredients:

1 1/2 lbs ground turkey

1 box stuffing mix (I make my own stuffing due to my family dietary needs! See recipe below.)

1 egg

2 T Vegetable Oil (for recipe 1)

Lettuce, Tomato, Mayo....  Whatever fix-ins your family likes (for recipe 1)

1 can turkey gravy (for recipe 2)

1 T Vegetable Oil (for recipe 2)

1 T butter (for recipe 2)

Recipe 1

1.  Prepare your stuffing mix according to the box directions. (Do not cook in oven.)

2.  In a bowl combine ground turkey, egg and stuffing.  Mix until combined.

3.  Form into patty's.  (I usually get 5 out of this but you can make them bigger or smaller depending on how many you need.)

4.  Add Oil to a large fry pan.

5.  In frypan on Med/Med High heat fry Turkey burgers until cooked through.  This will take anywhere from 15 to 20 minutes depending on the thickness of your burgers.  (Make sure they are cooked completely through and are NOT pink in the middle.)

6.  Serve on Hamburger Buns with lettuce, tomato, mayo or whatever fix ins your family likes!

** My husbands favorite way to eat his burgers is on a toasted bun with some cranberry sauce.  He says its just like Thanksgiving dinner on a bun!

Recipe 2

1.  Heat Oven to 350 degrees.

2.  Prepare your stuffing mix according to the box directions. (Do not cook in oven.)

3.  In a bowl combine ground turkey, egg and stuffing.  Mix until combined.

4.  Form into patty's.  (I usually get 5 out of this but you can make them bigger or smaller depending on how many you need.)

5.  In 9 X 11 casserole dish pour turkey gravy and 1 can of water.  Mix well.

6.  In a large fry pan brown patty's in 1 T oil and butter.  Do not cook through, just brown outside.

7.  Place browned patty's in gravy and cover casserole dish with foil.

8.  Bake for 45 minutes or until done.

9.  Serve over mashed potatoes, or steamed rice and a vegetable with cranberry sauce on the side.

***  I make my turkey burgers ahead of time in bulk, wrap them individually and freeze them.  Then I can pull out however many I need and make them either of the two ways above!  Recipe 2 will also work in the crockpot cooked on low for 6 hours.

Stuffing Recipe

stale bread cubes  (approx 4 cups)  (I use Gluten Free bread)

2 celery ribs cut in small pieces

1 carrot cut in small pieces

1 med onion cut in small pieces

1 stick of butter

1/2 qt. of chicken broth

2 T. poultry seasoning

2 T. salt

1 T. pepper

2 T. parsley

1.  Saute celery, carrot and onion in butter until translucent.  Add chicken broth as needed if liquid boils off.

2. Add vegetable mixture to bread in a bowl.  Mix thoroughly and add broth as needed.  Bread should be wet but not mushy!

3.  Add seasoning and mix well.

4.  Bake in a buttered casserole dish at 350 degrees for 30 minutes, use in the recipes above, or use to stuff a turkey or chicken.

**I freeze extras in 1 cup portions and freeze to use in recipes as needed!

Recipe 3- Bangin' BBQ Garlic Burger:

by: Laura Schultz

These burgers are an absolute favorite in our house! My boys ask for them often. I love making them! So easy! Not to mention tasty!

Ingredients:

1lb ground beef (or more depending on the number of burgers you are making)

1 Piece of whole wheat bread

Fresh minced garlic

4 tbsp of BBQ sauce (or more to taste)

Combine all ingredients. The piece of whole wheat bread is to be smashed in your hands and then picked apart into tiny little pieces. (Kids love doing this part,it's a great way for them to help) This helps hold the burger together.

Use your hands to mix all the burger ingredients together and form into patties. Cook in the oven at 350 degrees until desired, depending upon how you like your burger cooked. I prefer oven cooking for these because it brings the flavors of the garlic and BBQ sauce out.

Enjoy!
