Easy Peasy Ice Cream Sandwich Cake

A cool treat for everyone!

By Elise DeMoss, Assistant Publisher June 15, 2020

My daughter turned 3 in Quarantine and wanted an Ice Cream Cake! I immediately thought of my aunt's yummy ice cream sandwich layered cake that is so yummy, you will want to try this yourself!

Here are the directions to a super yummy treat!

1. Gather all your materials. At the least: Ice Cream Sandwiches, Cool Whip, Chocolate Syrup. Yum!

2. Grab the pan you want to use, depending on how many people you are serving. I used a 9x13 dish with a lid! This made at the least 9 servings. We had two boxes of ice cream sandwiches with some leftover, 1 container of cool whip, 1 container of syrup.

3. Layer the ice cream sandwiches (any brand) along the bottom. You can cut or break a part one or two to make all the sides even.

4. Spread thawed cool whip all over the layer of ice cream sandwiches.

5. Spread or place chocolate syrup all over the layer of cool whip. Some people use chocolate pudding here as well- totally up to you!

6. Layer another set of ice cream sandwiches and spread another layer of cool whip.

7. You can either use chocolate syrup in a pattern, write a message, or spread it on top of the cool whip.

8. Freeze for at least 4 hours. If you can make it the day before, it really solidifies the best!

9. Enjoy! Yummo!

What is cool about this recipe is that you can add so many things to dress it up! Some people put pudding in the middle of the layers instead of chocolate syrup. You could put m&m's, chocolate pieces, butterscotch, and so many other yummy things in the center between the layers and even on top!

Have fun making this yummy treat!
